A Unique Twist on a Classic Dessert
Burnt Basque cheesecake, a dessert that has taken the culinary world by storm, originates from the Basque region of Spain. It's known for its creamy interior and perfectly caramelized, almost burnt, exterior — baked at high temperature so the top caramelizes into a deep brown crust while the inside stays soft and custard-like, often described as "melt-in-your-mouth."
It was first created in the 1990s at La Viña, a bar and restaurant in San Sebastián, Spain, by chef Santiago Rivera. Initially just one of many desserts on the menu, it quickly became the restaurant's signature dish. In recent years it has crossed borders and become a global sensation, loved for its simple ingredients, forgiving recipe, and showstopper appearance.
